You can say either way...I speak Lao/ Laotian, but when you say I speak Lao it sounds better than when you say I speak Laotian which is referring to a person/people more than is the name of a language.
Normally people only say, "I speak Lao" not I speak Lao language, bcause it has been known that " Lao " is referring to a language in most part and sometime it can be referring to as a person as well depending on the text on the subject.
