Esan people= Lao people but with Thai nationality. They speak Lao mix with Thai words. So that's Esan vernacular now. The food is also called Esan food because they have so much influence from Thai and no longer called themselves Lao (for some people anyway). I've met Esan person and refused to talk to me in Lao eventhough he could speak Lao (he's about 50 yrs. old).
Larb and Koy are internationally known as Lao national dishes, or dishes of Lao people living in Laos and Northeastern Thailand. They are not traditional Thai or Siamese dishes at all.
